Whole Wheat Cookies.

The trend these days is to try and avoid processed foods. So try these cookies that I made using whole wheat flour and brown sugar. If you weren’t told, you wouldn’t know that these are a bit on the healthy side. They are just the thing for kids lunch boxes. These are made with almonds and sultanas, but try macadamias and ginger, chocolate chips and orange zest, walnuts and dates.

1¼ cups whole wheat flour

¼ cup old-fashioned oats

¼ cup sliced almonds

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

115g softened butter

¾ cup brown sugar

1 egg

1 teaspoon vanilla

¾ cup sultanas

1 teaspoon lemon zest.

Preheat oven to 350*F [175C]

In a small bowl mix together flour, oats ,almonds, baking powder and soda and salt.

In a medium bowl, cream butter and sugar. Add egg, mix well. Stir in vanilla. Fold in dry ingredients then fold in sultanas and zest.

Roll tablespoons of mixture into small balls and place on baking sheet about 2 inches apart. Bake 15-20 minutes, or until golden brown. Place on rack whilst still warm because they tend to stick to the tray if they go cold.

so delicious ... who would guess thy are healthy?
