I recommend buying potatoes from your local farmers market, so the grower can recommend the best variety for chips . These chips are a bit of work but are so worth it!
4 or 5 large potatoes suitable for chips.
Peel and cut potatoes into chips, then steam for about 5 minutes. Put in bowl, drizzle with olive oil and a minced garlic clove, season to taste, and toss everything gently to cover. Then tip the lot onto an oven tray and bake until golden brown. Turn during cooking to brown all sides.
