Garlic Chicken Rissoles

Put everything in a blender on high until light in colour and blended very finely. Lightly oil a frying pan, drop tablespoons of mixture onto pan, cook till brown on one side, then turn and cook on the other side. They are done when firm to touch. Serve with sweet chilli dipping sauce.

  • 500g chicken thigh meat – diced
  • 4 cloves garlic
  • 2 spring onions [shallots]
  • 1 onion
  • 1 cup mayonnaise
  • 1 egg
  • ½ teaspoon salt
  • 1 tablespoon fish sauce
  • 1 tablespoon coriander
